I stay in the Irving/Las Colinas area all the time for stay-cations. My wife and I honeymooned at the Omni Las Colinas 33 years ago. I know the area very well. Las Colinas is nice, safe, quiet. Sonesta ES needs a few changes to be more competitive.

We did not do much. But what we did do was great. Meow Wolf is a great and fun experience. Very unique. Scheels is amazing but be ready for crowds. Close to Grapevine and that is a nice area.
